One Pot Ginger Garlic Chicken and Rice

Ingredients

Instructions

Chicken and Rice
  1. Trim the chicken removing excess fat. Pat the chicken dry with a paper towel and season the chicken with salt and pepper.
  2. Over medium-high heat, in a heavy-bottomed pan with a lid, heat the sesame oil and sear the chicken on both sides. Remove chicken from the pan and reserve.
  3. Reduce heat to medium, and saute the ginger, scallions and garlic until fragrant about 4-5 minutes.
  4. Add the rinsed rice to the skillet and saute for 2-3 minutes. Ensure every grain of rice is covered with the oil and combined.
  5. Add in the soy and chicken broth being sure to scrap up any brown bits on the bottom of the pan using a wooden spoon. Bring to a boil, and then lower to a simmer. Return the chicken to the pan and cover with lid and simmer for 20 minutes or until rice is cooked and the internal temperature of the chicken is 165 degrees F.
  6. Plate and serve with Ginger Scallion Oil.
Ginger Scallion Oil
  1. Heat neutral oil and sesame oil in small pot over high heat until barely smoking.
  2. Pour hot oil over other ingredients in a heat proof bowl. Stir and serve.
