One Pot Creamy Chicken, Broccoli and Pasta

  1. Heat the oil in a large frying pan (skillet) on a medium-high heat. Season the chicken generously with salt and pepper and add to pan. Searing on both sides, about 3 minutes per side. Remove chicken from the pan and reserve.
  2. Reduce heat to medium, and add onion, garlic and red pepper flakes (if using). Saute until translucent and fragrant, about 3 minutes. Deglaze with wine, scrapping up brown bits with a wooden spoon. Add stock and cream and bring to a boil. Once boiling, add pasta and cook 3 minutes less than package instructions.
  3. Once pasta is almost cooked through, add broccoli and chicken to the pot and cook, covered, for the remaining 3 minutes until pasta is cooked through and broccoli is tender. Season to taste with salt and pepper, and add the zest and juice of 1 lemon. Remove from heat, add butter and cheese and mix well.
