Ingredients

Instructions

  1. First, bring a large saucepan of salted water to a boil and cook penne, until al dente, according to package instructions.
  2. Meanwhile, heat a deep sauté pan over medium heat and add olive oil. Add fresh and sun-dried tomatoes and chili flakes to the pan and simmer for approximately 5 minutes, until tomatoes begin to break down.
  3. Add garlic and simmer for an additional 5 minutes. Sauce should begin to smell fragrant. Season to taste with salt and fresh ground black pepper.
  4. Increase heat to medium-high, and add wine. The sauce should come to a rolling simmer. Cook for approximately 5 minutes until the wine has reduce by half.
  5. Add heavy cream and simmer for about 2 minutes. Fold in cooked penne, and chopped spinach. Continue to combine over medium heat until pasta and spinach are well incorporated. Turn the heat off and add parmesan and butter. Stir with a wooden or metal spoon until homogeneous and pasta is well coated in sauce. Add lemon juice and serve immediately with additional parmesan.
