Gnocchi alla Fonduta

Housemade gnocchi, cheese fondue, crispy prosciutto and fresh rosemary.

I’m not usually a gnocchi girlie just because of the texture, but these gnocchi were deliciously light. I liked the texture and salt from the prosciutto and the cheese fondue made the dish feel naughty, in a good way.

 
 

Short Rib Agnolotti

This was served with parmesan and some sort of beef jus. It was super savory and meaty.

 

Rigatoni

@Carmentas, Brooklyn, NY

Spicy vodka sauce with a guanciale and pancetta base, and grana padano.

Simply delicious and rivals Carbone. Perfect amount of sauce with a great depth of flavor thanks to the guanciale and pancetta base.

 

Beef Patty

This was a labor of love which but was well worth all the steps. I can’t wait to make them again and stock the freezer.

I laminated the pastry crust making the dough light and flakey. The filling was moist and flavorful with just the right amount of heat. Next time I make these, I’ll think of some sort of sauce to serve with. But they are incredible on their own.

 

Olive Oil Cake

Olive oil cake, golden raisin marmellata, madeira, crème fraîche mousse.

The cake was moist and airy, not too sweet and the perfect end to a meal.
